When it comes to cooking Abgoosht you cannot haste and you have to be patient because it takes more than two hours to be prepared and Persian people usually cook it longer than 2 hours.

This dish is made of lamb, chickpea, white beans, dried lemons, onion, potato, tomato paste, lemon juice, turmeric, water and a bit of seasoning.

When it is ready you eat two different foods, so it is a double pleasure. Once you pour bread pieces inside the soup and eat for the first time and second you mash other ingredients with a masher (gooshtkub) and eat for the second time!

  • 2 lamb shanks
  • 1 cup white beans, soaked over night
