Koofteh Shami

In order to prepare Koofteh Shami the chickpeas are cooked with a little bit of salt, then you should ground them with beef and thyme. Then you should add the egg, salt, turmeric, and chickpea flour, to a point you see fit. After that, you should pick loaves of the mixture and fill it with raisins or a walnut, roll in egg or chickpea flour, and fry them inside the oil.

Fry a bit of the flour inside the oil and add it to the sauce. Put it on temperate heat until it becomes tender. Then add diced vegetables, apricot, lime juice, saffron, sliced and fried onions, and then add the meatloaves. Cook for about half an hour until the sauce becomes thick and the meatloaves are completely cooked. At this point, Koofteh Shami is ready to be garnished and served.


  • 400 g lean ground beef
  • Chickpeas 3 cups
  • Egg 1
  • 2 to 3 tablespoons dried thyme
  • Enough chopped walnuts and raisins
  • Salt, turmeric, pepper, and oil (for frying) to the extent necessary
  • Chickpea flour to the extent necessary
  • Apricot
  • Lime juice
  • Saffron
