Koofteh Tabrizi

Koofteh Tabrizi belongs to the northwestern part of Iran and Tabriz city. It is a common dish among all Iranians and you can find this dish in restaurants.

It is sort of a big meatball and it is made of split yellow peas, rice, ground beef, chives, tarragon, leek, savory, walnuts, eggs, dried apricot, dried barberries, turmeric, chili pepper, and salt.

In order to cook Koofteh Tabrizi, you should put grind split yellow peas, rice, and potato. Add the onions to the ground meat and mix them. Then you have to put the mixture inside the refrigerator for about one hour. After resting the paste you should put a hardboiled egg inside it and sauté the barberry and walnut for a few minutes. Then you should make the sauce and add the paste to it and let it cook slowly.

Ingredients

Meatball Mixture:

  • 500g ground beef
  • 1 cup calrose rice, washed, soaked and rinced
  • 1/2 cup split peas, parboiled
  • 1 medium onion, finely grated
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup fresh coriander, finely chopped
  • 2 tbsp fresh thyme, finely chopped
  • 2 tbsp dried mint
  • 1 tbsp. dried tarragon
  • 2 tsp. tumeric powder
  • 1 tbsp. salt
  • 1 tsp. black pepper powder

For Stuffing:

  • 10 black prunes, pitted
  • 1/2 cup walnuts
  • 1/2 cup fried onion

Tomato Sauce:

  • 1/4 cup Vegetable oil
  • 1 large onion, finely chopped
  • 1 tsp. tumeric powder
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 cup tomato paste
